<Poultry - Chim Rừng>

There are a variety of poultry types from ordinary chicken to game birds(pheasant, guinea fowl, teal, mallard, pigeon, quail etc). Game birds in general good in rich red wine stews or in casserole. The carcass of poultry can be made into splended stock with a few herbs and vegetables. These poultry needs to wrap with some bacon or pancetta if cook as whole roast.
