[Chicken Curry - Càry Gà]

Serves: 2

  • 300g chicken meat or 2 chicken breast, cut into 3-4cm chunks
  • 100g sweet potatoes, peeled and cut into 3-4cm chunks
  • 200ml coconut milk
  • 4 or 5 tablespoons oil

For The Chicken Marinade:

  • 2/3 teaspoons turmeric powder
  • 1 teaspoons medium curry powder
  • 4 or 5 curry leaves
  • 1 lemongrass stick, slightly bruise and cut into 6-7cm long
  • 1 red chilli, chopped finely
  • 3 or 4 garlic cloves, peeled and chopped finely
  • 1/2 teaspoon salt
  • 1 teaspoon sugar

Garnish with some basil

Cooking Method:

  1. Marinate the chicken with the marinade for 30-45 minutes.
  2. While the chicken is marinating, preheat a large pan with oil until fairly hot. Fry the sweet potatoes for 1-2 minutes each side until slightly brown and crisp. Remove the sweet potatoes from the pan and put it into a plate.
  3. When the chicken is marinated, preheat the pan with the oil that you have fried the sweet potatoes. When the pan is hot, add the marinated chicken mix into the pan and stir fry for 2-3 minutes. Add the coconutmilk, water and sweet potatoes into the pan and cook for 12-15 minutes. You can add another 1/2 teaspoon of turmeric if you prefer more golden colour.
