[Beef Noodle Soup - Phở Bò]

Beef Noodle Soup(Phở) is Vietnamese most famous dish. In Vietnam you can find Phở everywhere. Vietnamese eats Phở as a replacement for the daily meal(rice dishes). Phở is described as a flat noodle soup with meats, onions, ginger and spices. There are two common Phở: Phở Bò (Beef Noodle Soup) and Phở Gà (Chicken Noodle Soup).

Serves: Normaly this would serve for 2 bowls for a rich version. However, it can be serve up to 3 or 4, just need to adjust the amount of water.

  • 150g lean beef, thinly sliced
  • 600g Oxtails pieces
  • 3 large onions, peeled and chopped into half
  • 200g ginger, peeled
  • 300g radish or daikon, cut into 4-5cm chunks
  • 150g white flat rice noodle
  • 1 stick of cinnamon
  • 4 whole star anise
  • 1 whole nutmeg
  • 3 spring onion, thinly chopped
  • 1 chilli, thinly chopped
  • 1 lime, chopped into quarter
  • Plenty of mints, basil, bean sprout
  • 4 tablespoons of fish sauce
  • 4 tablespoons of oil
  • 1/2 coffee spoons of MSG
  • 1/2 coffee spoons of salt

Cooking Method:

  1. Preheat the grill until very hot.
  2. Grill 2 and 1/2 Onions and ginger for 4 minutes each side until slightly burnt.
  3. Slightly break the cinnamon.
  4. Heat up the pan and add oil in this pan.
  5. Fry the cinamon, star anise and nutmeg in this pan for 3 minutes.
  6. Bash the burnt onions and ginger in the pestle + mortar( or rolling pin) until bruised.
  7. Add the oxtails, onions, ginger, radish and the spices(cinamon, star anise and nutmeg) into a large pan.
  8. Add 2.5 litre of boiling water into this pan.
  9. Return to boil. Reduce the heat to medium.
  10. Simmer slowly for 2 to 3 hour until the liquid in the pan to 1.0 litre.
  11. Strain and keep the liquid through a sieve.
  12. Soak the noodle in boiling water for 10 - 15 minutes.
  13. At the same time thinly slice the remain onions.
  14. Put cooked noodle into two bowls. Add beef, spring onion and onions.
  15. Heat up the seperated liquid. Add the fish sauce, MSG and salt. Bring to boil.
  16. Pour the liquid into the bowl of noodle.
  17. Top up with basil, mints, chili,lime and bean sprout to an amount you prefer
