[Creamy Mushroom with Roast Chicken - Gà Nướng Sốt Nấm]

Roast Chicken in Mushroom Sauce is a very delicious chicken dish. A flavour some creamy mushroom with the buttery crispy chicken blend together extremely well. A touch of roast potatoes will finish in a satisfy way

Ingredients:

Serves: 2

For The Chicken:

  • 2 chicken breast
  • 1/4 teaspoons salt
  • 25g butter
  • 2 or 3 tablespoon oil
  • A few sprigs of thyme, cut into 4-5cm long
  • A few sprigs of rosemary, cut into 4-5 cm long
  • 3 or 4 gralic cloves, roughly chopped

For The Creamy Mushroom Sauce:

  • 200g wild mushroom or button mushroom, thinly sliced
  • 200ml milk
  • 2 or 3 garlic cloves, peeled and chopped into small pieces
  • 2 or 3 tablespoon oil
  • 25g butter
  • 1/5 teaspoon salt

For The Potatoes:

  • 200g new baby potatoes
  • 25g butter
  • 1/4 teaspoon salt

For The Kale

  • 200g kale, cut into 3-4cm long
  • 2 or 3 tablespoons oil
  • Salt seasoning to taste

Cooking Method:

For The Chicken:

  1. Preheat the an oven proof frying pan to very hot. Put the chicken into the frying pan and use a any flat utensil to press the chicken down and move the chicken round the pan to cover all the oil while pressing down for 2 minutes and repeat the same method for the other side for 1 minute. This way to make sure the chicken skin will be crispy. Add the butter, thyme, rosemary and garlic into the pan. Stir them around so the butter will melt and the chicken will get the flavour of the thyme, rosemary and garlic.
  2. When the butter is melted, put the whole pan with the chicken and herbs into the oven of 180ºC-200ºC. Roast the chicken for 12-14 minutes.

For The Creamy Mushroom:

  1. Preheat a frying pan until fairly hot. Add the garlic into the pan and fry for 1-2 minutes until golden.
  2. Add the mushroom into the frying pan and stir fry for 1 minute.
  3. Add the milk into the pan and stir fry for 3-5 minutes until the sauce become thicken. Seasoning with salt.

For the Potatoes:

  1. Bring a pan with plenty of water(make sure it covers all the potatoes) to boil. Add the potatoes, salt and cook for 12-15 minutes.
  2. When the potatoes is cooked, drain the water away. Melt the butter in a frying pan and become fairly hot. Add the potatoes into the pan and stir fry for 1-2 minutes.

For The Kale

  1. Preheat a frying pan with oils until very hot. Add the kale into the pan and stir fry for 3-4 minutes. Seasoning with salt.
