[Claypot Pork - Thịt Kho Tiêu]

Claypot Pork(Thịt Kho Tiêu) is a favourite Vietnamese home-cooked dish. It serves well with plain rice or congee. It has a strong sweet tangy flavour. Very authentic but can be daring for Western palate.

Serves: 2

  • 400g pork, thinly sliced into 2 or 3 cm strips
  • 1/8 small cup of fish sauce
  • 2 or 3 shallots
  • 2 tablespoons sugar
  • Plenty of pepper
  • A few spring onions for garnish

Cooking Method:

  1. Heat up the sugar in a claypot until melted. Stir well to make sure all the sugar is caramelised thoroughly.
  2. Add the 1/3 fish sauce into the claypot and stir well for 3-5 seconds.
  3. Add another 1/3 of fish sauce and repeat the method for another 3-5 seconds. Add the remaing fish sauce and repeat the same process until all the sugar is disolved.
  4. Add the shallots, pepper and the pork into the pan. Cook for 15 - 20 mintues. Turn the pork throughout the cooking period to make sure all the pork cooked thoroughly.
