[Grilled Chicken Noodle Salad - Bún Gà Nướng]

Grilled Chicken Noodle Salad is a different way of cooking, flavour some how familar to any Vienamese. The basic idea is like Bún Thịt Nướng which is a grilled pork noodle salad but this dish has different marinate and cooking method (griddle rather barbecue) suitable for Western kitchen.

Serves: 2

  • 2 breast chicken
  • 100g thin rice noodles
  • 2 tablespoons chilli sauce
  • 2 tablespoons soy sauce
  • 4 tablespoons honey
  • 1/2 coffee spoons salt
  • 4 coffee spoons sugar
  • 1/4 cucumber, thinly stripped
  • 1/2 carot, thinly stripped
  • 1 or 2 leaves of soft leaf lettuce
  • A handful bean sprout
  • A few leaves of mints, chopped roughly
  • A few leaves of basil, chopped roughly
  • A handful of peanut,  bashed to small pieces

Cooking Method:

  1. Cut the chicken into thin strips (or bite size) about 2-3 cm long. Marinate the chicken with soy sauce, honey, salt, chilli sauce and sugar for 15 minutes.
  2. Preheat the griddle until very hot. Lay the chicken in the griddle to grill fro 1-2 minutes each side until dark brown. Grill the chicken all side until no transperance areas.
  3. Soak the noodle in boiling water for 6 minutes until cooked. After draining the noodle. Stir in a tablespoon of oil to stop them from sticking together.
  4. Put the noodle, cucumber, carot, bean sprout and lettuce in a bowl. Mix well.
  5. Add the grilled chicken in the bowl and mix well. Top up with mints, basil and peanut.
  6. Mix well before eating.
