[Lã Vọng Grilled Fish - Chả Cá Lã Vọng]

Serves: 2

  • 300g white thin fish fillets
  • 75g thin rice noodles
  • 25g dills, cut into about 6-8cm long
  • 50g spring onions, cut into jullien about 6-8cm long
  • 1 tablespoon tamarind paste
  • 1 tablespoon fish sauce
  • 1 tablespoon turmeric
  • 5 or 7 tablespoons oil
  • 3 or 4 tablespoons Worcestershire sauce
  • A handful of bashed peanut

Cooking Method:

  1. Marinate the fish with the tamarind, turmeric and fish sauce for about 15-20 minutes.
  2. Soak the noodles in boiling water for 3-4 minutes. When the noodles cooked stir in a tablespoon of oil and the Worcestershire sauce.
  3. Heat up a frying pan with half of the oil until very hot. Fry the spring onions and dills for 15-20 seconds until they soften.
  4. Preheat the grill until very hot. Grill the fish for about 1 minutes each side.
  5. Heat up a frying pan with the remaining oil until very hot. Fry the fish for 30 seconds to 1 minute each side.
  6. Lay the noodle into the bowl. Then the fried dill and spring onion. The fried fish is layed on top. Mix the noodles, dills and spring onions well before eating.
