[Summer Lobster Salad - Tôm Hùm Sà Lách]

  • 1 cooked lobster
  • 100g peas
  • 4 or 5 asparagus stick, chopped into 4-5cm long
  • 4 or 5 cos lettuce, cut in horizontal with the width of 2-3cm
  • 1 medium carrot, cut into thin strips with the length of 4-5cm
  • 1 small yellow pepper, cut thinly with the length of 4-5cm
  • 2 or 3 garlic cloves, peeled and chopped finely
  • 30g butter

For The Dressing

  • 1 tablespoons soy sauce
  • 1/3 tablespoons vinegar
  • 1/2 tablespoons olive oil
  • 2 teaspoons sugar
  • 1/4 lime

Cooking Method:

  1. Mix all the dressing thoroughly in a bowl.
  2. Bring a large pan with plenty of water to boil. Add 1 coffee spoons of salt, peas and asparagus cook for 30 seconds to 1 minutes. Drain the water away and put it to one side.
  3. Mix the cos lettuce, carrot, yellow pepper, asparagus and peas into a large bowl. Add the amount of dressing to taste into the bowl.
  4. Preheat a frying pan with the butter until the pan is hot and all the butter is melted. Add the garlic into the pan and fry for 2-3 minutes until golden brown. Add the lobster into the pan and stir fry for 30 seconds. Seasoning with salt and pepper to taste.
  5. The lobster can be mixed into the salad or place on one side of the salad depending how you like it.
