[Pea and Mint Soup - Súp Đậu và Rau Húng Cây]

Serves: 2 to 3. It can divide into 3 small bowls or 2 medium bowls

  • 300g peas
  • 12g mints, remove the stalk and cut into halves
  • 2 small shallots or 1 large shallot, cut finely
  • 500ml water
  • 50g butter
  • 2 or 3 tablespoons olive oil
  • 2 teaspoons vegetables stock
  • 1/8 teaspoons salt

Cooking Method:

  1. Preheat the large pan with the oil until very hot. Add the shallot into the pan and fry it for 30 seconds to 1 minute until slightly golden.
  2. Add the peas, water and stock into the pan. Bring to boil and add the mints into the pan. Remove the pan from the hob. Use a blender to blend the soup into a smooth liquid. Add the butter into the blended soup. Return to the hob to smell the butter if nessary. Seasoning with salt.
