[Sticky Rice Chicken - Xôi Gà]

Sticky Rice Chicken is a breakfast dish of many Vietnamese. It commons name is "Xôi - Sticky Rice" however there a variety of "Xôi". Xôi Gà is a Vietnamese name for this dish. Xôi Thập Cẩm is another verison with combination of Vienamese sausage and eggs. The sweet version is Xôi Đậu Xanh which includes mung bean, peanut and crispy onions

Serves: 2

  • 150g glutinous Rice
  • 1 bowl of shredded cooked chicken or 2 chicken breasts, cooked and shredded
  • 1 tablespoon soy sauce
  • 1 and 1/2 teaspoon sugar
  • 3 spring onions
  • A few sprigs of coriander, chopped roughly
  • 6 tablespoons oil
  • 2 or 3 garlic cloves, peeled and chopped roughly into small pieces
  • Some crispy onion for garnish

Cooking Method:

  1. Add 1.5 litres of boiling water in a large pan. Bring to boil and add the rice reduce the heat to medium. Cook for 10 minutes. When the rice is cooked, drain the water away and put the rice to one side.
  2. Heat up a frying pan with 3 tablespoon of oil. Stir fry the spring onion for 10-15 seconds.
  3. Heat up a frying pan with 3 tablespoon of oil. Fry the garlic until golden. Add the chicken, soy sauce and sugar. Stir fry for 2-3 minutes.
