[Sweetcorn Chicken Soup]

Sweetcorn and Chicken Soup is a light dish with a refreshing touch. Sometimes it is served in a Vietnamese banquet.

Serves: 2

  • 500ml chicken stock
  • A small bowl of cooked shredded chicken or 1 chicken breast, cooked and shredded
  • 1 sweetcorn cob, remove the corns from the cob
  • 1 egg, slightly whisked
  • 1/2 coffee spoons msg
  • 2/3 coffee spoons salt
  • 1 tablepoon arrowroot flour
  • 2 tablespoons water
  • Chilli and coriander for garnish

Cooking Method:

  1. Put the chicken stock into a pan. Bring to boil and add the sweetcorn, salt and msg into the pan. Cook for 3-5 minutes. Add the chicken into the pan.
  2. Mix the arrowroot flour with water in a small bowl. Add this mix slowly into the pan while stiring the liquid in the pan.
  3. Slowly pour and stir the egg into the pan.
